  • "egg-stra" Special Skillet Dish

  • Prep Time: 15 Minutes (Total Time: 45 Minutes)
  • Serving Size: 6
  • 1 pound Potatoes (about 3 Medium), Peeled, Cubed (about Three & Half Cups)
  • 6 slices OSCAR MAYER Bacon, Chopped
  • 1/2 of a Medium Red Pepper, Chopped
  • 1 Small Onion, Chopped
  • 6 Eggs
  • 1 cup KRAFT Shredded Cheddar Cheese
  • PLACE potatoes in large saucepan; cover with water. Bring to boil; continue boiling 5 min. Drain well; set aside.

    COOK bacon in large nonstick skillet on medium-high heat. Remove from skillet; drain and set aside. Wipe out skillet with paper towel. Add red pepper and onion to skillet; cook and stir on medium heat 3 min. Add potatoes; cook an additional 10 min., stirring occasionally.

    MAKE 6 small wells in potato mixture. Place 1 raw egg in each well. Sprinkle evenly with bacon and cheese; cover. Cook 5 to 8 min. or until eggs are set.
