Lowfat Bran Muffins With Fig Newtons®
- Prep Time: 10 Minutes (Total Time 35 Minutes)
- Serving Size: 12
- 1 cup Flour
- 2 tablespoons Brown Sugar
- 1 tablespoon CALUMET Baking Powder
- 1 teaspoon Ground Cinnamon
- 1 Egg
- 1-1/4 cups Milk
- 2 cups POST Bran Flakes
- 1/2 cup Applesauce
- 12 FIG NEWTONS Fruit Chewy Cookies, Chopped
PREHEAT oven to 400?F. Mix flour, sugar, baking powder and cinnamon in large bowl; set aside. Beat egg and milk with wire whisk in medium bowl until well blended. Stir in cereal. Let stand 5 minutes. Stir in applesauce. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Gently stir in cookies. SPOON batter evenly into muffin cups sprayed with cooking spray, filling each to the top.
BAKE 20 to 25 minutes or until golden brown. Cool in pan 5 minutes; remove from pan. Serve warm.
